Led by Tim Granger, the family plans to open their second Da Chicken Shak & More this January at 31st and South Seneca. Eventually, said family patriarch Chris Granger, they hope to have four or five of the restaurants. in Wichita.
The new restaurant will be on the end cap of a strip center on 31st Street South that faces the Dillons and backs up to the Walmart Neighborhood Market, Chris Granger said. The address is 1112 W. 31st Street South.
Chris Granger said he has “temporarily come out of retirement” to help son Tim get the second restaurant going. They started remodeling on Sunday night.
The first restaurant, which specializes in chicken fingers, fried catfish and many of the fried items from Da Cajun Shak’s menu, is exceeding expectations, Chris Granger said, and it’s been especially well received by people in the surrounding neighborhood.
“We expected that one to do well because even with the saturation of chicken fingers, we know we’ve got a good product and we’re proud of it,” he said.
Surprisingly, he said, the best seller at the restaurant so far is the fried catfish. The menu also has fried shrimp, fried alligator tail and fried crawfish. This summer, Chris Granger said, the family plans to put on some crawfish boils at the 13th Street restaurant.
Da Chicken Shak & More 2 will seat 25, he said.
The Granger family — transplants from Breaux Bridge, Louisiana, with the accents to match — has been in the restaurant business in Wichita for 13 years. They opened Da Cajun Shakat 6249 E. 21st Street in November 2005.
